Typical dishes of Cusco. The city of Cusco is known for its excellent cuisine. Among its traditional dishes are the signature dish “El Chiriuchu,” Baked Guinea Pig, Chairo (Steak), Quinoa Soup, Pear Soup, Fried Trout, Stuffed Rocoto (Rocoto Steak), Fava Bean/Mushroom Kapchi, Cheese Corn, Cusco Pork Rinds, Zarza de Patitas (Zarza de Patitas), and Roasted Suckling Pig.

Cusco’s cuisine is currently considered one of the best in Peruvian Andean cuisine, as it uses local ingredients such as potatoes, chuno (a type of meat), moraya (a type of corn), and quinoa, among others.

Gastronomy Cusco

Chiriuchu: This is the emblematic dish of Cusco’s cuisine and is known for its unique combination of flavors. Its main ingredients are roasted guinea pig, chicken, jerky, cochayuyo, chorizo, cheese, rocoto, fish roe, toasted cancha, and corn tortilla. This typical dish is eaten cold and mainly during Cusco’s festivals. Throughout the year, you can also find it in some Cusco restaurants.

Cuy al Horno: This is another typical dish from the city of Cusco and is accompanied by potatoes, noodles, stuffed rocoto, and tullan. You can find this typical dish in the town of Tipon, where there are several restaurants that sell the famous roasted guinea pig.

Chairo: This is a soup accompanied by lamb, cured meat, squash, chuño, potatoes, and carrots. It is a traditional dish of Cusco cuisine.

Kapchi de Zetas: This traditional Andean dish is made with mushrooms, potatoes, broad beans, cheese, and other ingredients. We also have Fava Bean Kapchi, another excellent typical dish from Cusco.

Choclo con Queso: This is an appetizer made with corn and cheese, and the best time to eat it is from January to April, as corn is abundant.

Chicharrón Cusqueño: A pork-based dish, cooked and fried, served with potatoes, mote (a type of corn), and salad.

Lechón al Horno (Horn Lechón): A roasted suckling pig dish served with moraya (a type of meat), tamal (a type of bread), and rocoto (a type of hot pepper).
